Classic Turkey Club Sandwich
Make a classic turkey club sandwich using three pieces of toasted sliced bread. Place one piece of bread on the bottom and top with a thin layer of mayonnaise. Cover the mayonnaise with a few slices of turkey, sliced tomatoes and lettuce. Add a second piece of bread and top with more turkey, sliced cheese and crispy bacon. Spread a thin layer of mayonnaise on the last bread slice and top with the mayonnaise side down. Cut the sandwich in half twice, making four smaller sandwiches and slide a toothpick through the top of each sandwich. For a different flavor, replace the mayonnaise with avocado. The same idea works equally well if you want a taste of Thanksgiving throughout the year. Start with a slice of thick, hearty bread that can withstand a large number of toppings. Spread the bottom of the bread with a layer of cranberry sauce and top the sauce with a layer of mashed potatoes. Cover the potatoes with a dollop of stuffing and arrange turkey slices on top. Pour some gravy over the layers, if desired, and top with the second slice of bread. The sandwich is so sumptuous that you might need a knife and fork to eat it.

The curried turkey wrap sandwich is a simple way to use the last of deli turkey or roasted turkey leftovers. Combine mayonnaise with curry powder and garlic. Taste the mixture in order to achieve the right ratio for your tastes. Place a tortilla on a work surface and spread a thin layer of the mayonnaise mixture over the tortilla. Top tortilla with sliced cheese, turkey, lettuce and tomatoes; roll tortilla into a cylinder. Cut wrap in half and serve.
